Halloumi Curry on Flatbread

Ingredients

Flatbread

  • 32 g all purpose flour
  • 20 g water

Halloumi Curry

  • 40 g halloumi cut into 1 cm cubes
  • oil
  • 1 ml garlic grated
  • 4 ml garam masala
  • 2 ml ground cumin
  • 1 ml cayenne pepper
  • 1 ml curry powder
  • 0.5 dl tomato passata
  • 2 tbsp plain thick yoghurt
  • salt
  • black pepper

Garnish

  • plain yoghurt (if the yoghurt is too thick, you can thin it out by mixing it with some milk)

Instructions

  • Mix flour and water in a bowl and knead it by hand into a smooth dough.
  • Shape into a ball, cover and let rest while preparing the Halloumi Curry.
  • Grate garlic and cut halloumi into 1 cm cubes.
  • In a small pan over medium heat, cook the halloumi until all sides are lightly browned and crispy. Then set aside so they do not burn.
  • Heat a small saucepan over medium heat.
  • When the pan is hot, add oil and garam masala, ground cumin, cayenne pepper, curry powder and minced garlic. Sauté for about 30 – 60 seconds.
  • Add the tomato passata, yoghurt and the crispy halloumi and stir. Let simmer while finishing off the bread.
  • On a lightly floured surface, flatten the dough using a rolling pin.
  • Heat a pan over medium high / high heat.
  • Place the dough on the heated pan and let cook on both sides until nicely browned (but NOT burnt). It will take some time and the dough will puff, which is a good sign! If it puffs too much, just press the bread down to release air.
  • Serve the Halloumi Curry on the freshly baked bread and garnish with some yoghurt for some freshness. Enjoy!
