Carrot Cake Oatmeal
Ingredients
The Oatmeal
- 1 dl oats
- 2 dl water or 1 dl water/ 1 dl milk
- 0.5 dl carrot grated
- 0.5 tbsp maple syrup or other sweetener
- 1 tbsp walnuts chopped
- 1 tbsp raisins
- 0.5 tsp cinnamon
- pinch of nutmeg
- pinch of salt
The Frosting
- 1 tbsp cream cheese
- 0.5-1 tbsp milk
- 0.5 tsp vanilla sugar
Other Toppings
- Maple syrup
- Walnuts crushed
Instructions
- In a small saucepan, add oats, water, grated carrot, crushed walnuts, raisins, cinnamon, nutmeg and salt. Let come to a simmer and let simmer while stirring once in a while until thickened to your liking.
- Meanwhile in a separate small bowl, mix together the "frosting". Cream cheese, milk and vanilla sugar.
- Pour the oatmeal to a bowl and top it with the "frosting", maple syrup and some crushed walnuts.
- Enjoy!
