Lohikeitto, Finnish Salmon Soup
Ingredients
- butter
- 20 g leek sliced
- 40 g potato cut into 1 cm cubes
- 20 g carrot cut into 1 cm cubes
- 2 dl water
- 1/4 cube fish bouillon
- 1 tbsp creme fraiche
- 40 g salmon cut into bite size pieces
- dill
- salt
- black pepper
Instructions
- Slice leek, cut potato and carrot into 1 cm cubes and cut salmon into bite size pieces.
- Melt butter in a medium hot saucepan.
- Sauté leek for about 2 min.
- Add potato, carrot, water and fish bouillon cube and cook for about 15 min or until potatoes are fork tender.
- Add creme fraiche and stir.
- Add salmon and bring to a simmer, cook until salmon is cooked through.
- Season with dill, salt and black pepper.
- Serve with some buttered bread.
