Preheat the oven to 165°C.
Line a 12 x 20 cm ovenproof form with parchment paper.
In a bowl, combine all the dry ingredients. Oats, puffed rice, chopped nuts, chopped dark chocolate, chia seeds and a few pinches of salt.

In a separate bowl, combine all the wet ingredients until smooth. Honey, creamy peanut butter, coconut oil and vanilla extract.
75 g honey, 60 g creamy peanut butter, 25 g coconut oil, 2 ml vanilla extract
Combine all ingredients and stir until well combined.
Scoop the mixture into the ovenproof form and firmly press the mixture flat into an even layer. It should be about 2 - 2.5 cm thick.
Bake for 25 min.
Take out from oven and let cool to room temperature, then place them in the fridge for 30 min.
When the granola bars are completely cooled down, slice them into 8 bars and enjoy!
