Whipped Feta and Balsamic Tomatoes on Toast, For One

Ingredients

Whipped Feta

  • 30 g feta cheese
  • 40 g plain yoghurt
  • 0.5 tsp honey
  • black pepper to taste

Balsamic Tomatoes

  • 10 cherry tomatoes
  • 1 clove of garlic small
  • 1 tsp olive oil
  • 0.5 tsp balsamic vinegar

Other

  • 1 toast i used ciabatta
  • 2 walnuts

Instructions

  • In a blender, mix feta cheese, plain yoghurt, honey and black pepper into a smooth cream.
    30 g feta cheese, 40 g plain yoghurt, 0.5 tsp honey, black pepper
  • Heat some olive oil in a small pan on medium high heat.
    1 tsp olive oil
  • Sauté tomatoes for about 8 min or until they have softened. Then mash them a little using a spatula.
    10 cherry tomatoes
  • Add minced garlic and balsamic vinegar and cook for another 8 min.
    1 clove of garlic, 0.5 tsp balsamic vinegar
  • Roast toast the way you prefer.

  • On the toast, spread the whipped feta, then the tomatoes and lastly crush some walnuts on top for some crunch.
    2 walnuts
