Chop tomato and mince garlic.
0.5 tomato, 1 clove of garlic
In a saucepan on high heat, add some olive oil.
Sauté tomatoes and garlic until soft, about 2 min.
Add tomato paste and sauté for 1 min.
1 tsp tomato paste
Add risoni, stir and cook for 1 min.
0.75 dl risoni
Add vegetable broth and cook the risoni for about 5 min while stirring frequently.
1.5 dl vegetable broth
Add grated parmesan cheese and mozzarella and stir.
2 tbsp parmesan cheese, 1 tbsp mozzarella
Cook for another 5 min, or until the risoni is fully cooked, stir frequently.
Season with salt and black pepper and enjoy!
