Preheat oven to 225 C.
Chop yellow onion, mince garlic and thinly slice halloumi.
Heat a pan to medium high and add olive oil.
Sauté onion for 4 min.
Add garlic and tomato paste and sauté for 1 min.
Add crushed tomatoes, water, vegetable bouillon, thyme and honey, let come to a boil, then simmer for 5 min.
Add spinach and let simmer for 5 min.
Now to the layering! In an oven proof form, layer tomato sauce, lasagna sheets, pumpkin seeds and halloumi. I made about 3 layers of lasagna sheets, topped with some tomato sauce and lastly some grated cheese.
Bake in oven for 20 min.
