Peel carrot and daikon and cut them into small sticks.
6 cm carrot, 3 cm daikon
Place carrot and daikon in a bowl. Add sugar and salt and massage the vegetables for about 3 min.
1 tsp sugar, 0.5 tsp salt
Rinse the vegetables in cold water and drain well.
In a bowl, mix together sugar, white vinegar and hot water until sugar has dissolved.
1 tbsp sugar, 2 tbsp white vinegar, 2.5 tbsp water
Combine all the ingredients, the vegetables and the liquid, in a bowl. Make sure all the vegetables are covered in liquid.
Let the pickles sit in the fridge for a few hours and enjoy!
