Preheat oven to 220 C, with the baking tray in it.
Peel and wash potatoes and cut into chunks.
In a pot, bring water to a boil and add salt and baking soda. Stir until the salt has dissolved.
Add the potatoes and boil for about 10 min or until fork tender.
Meanwhile, add olive oil and minced garlic into a small pot over medium heat and cook until the garlic has gotten some colour.
Strain the oil into a large bowl and save the garlic for later.
Drain the cooked potatoes and let them steam for 1 min to get rid of excess moisture.
Add the potatoes to the bowl with the oil, add some salt and black pepper and toss the potatoes to create a mashed potato like layer on them.
Transfer the potatoes to the preheated baking tray and spread them out so there is a little space between each of them.
