  • 1 tbsp mirin
  • 1/2 tbsp sake
  • 1/4 tbsp granulated sugar

Instructions

  • Peel yellow onion, carrot, potato and daikon.
  • Cut yellow onion into thick slices, cut carrot, potato and daikon into chunks (all about the same size, about 2 cm), cut green beans in halves and cut chicken into bite size pieces.
  • Heat some rapeseed oil in a small pot over medium heat.
  • Sauté yellow onion for about 5 min.
  • Add carrot, potato, daikon and chicken.
  • Add water, hondashi, soy sauce, mirin, sake and sugar and give it a stir.
  • Let come to a simmer and simmer for about 25 min or until chicken is cooked though and veggies are soft and tender.
  • When almost done, add the green beans and let simmer until the beans are cooked though.
  • Serve and enjoy! Optional, but recommended topping: Soy marinated egg
  • Soy marinated egg:
Boil egg for 8 min. Transfer the egg to a cold ice bath and let cool down for 4 min. Peel and transfer the peeled egg into a small cup. Add 1 tbsp soy sauce, 1/2 tbsp mirin and about 1-2 tbsp water just to cover the egg. Let marinate in the fridge for about 10 h.
