Peel yellow onion, carrot, potato and daikon.
Cut yellow onion into thick slices, cut carrot, potato and daikon into chunks (all about the same size, about 2 cm), cut green beans in halves and cut chicken into bite size pieces.
Heat some rapeseed oil in a small pot over medium heat.
Sauté yellow onion for about 5 min.
Add carrot, potato, daikon and chicken.
Add water, hondashi, soy sauce, mirin, sake and sugar and give it a stir.
Let come to a simmer and simmer for about 25 min or until chicken is cooked though and veggies are soft and tender.
When almost done, add the green beans and let simmer until the beans are cooked though.
Serve and enjoy! Optional, but recommended topping: Soy marinated egg
Soy marinated egg:Boil egg for 8 min. Transfer the egg to a cold ice bath and let cool down for 4 min. Peel and transfer the peeled egg into a small cup. Add 1 tbsp soy sauce, 1/2 tbsp mirin and about 1-2 tbsp water just to cover the egg. Let marinate in the fridge for about 10 h.
