Preheat the oven to 230 C.
Mix together the dry ingredients, flour, sugar and salt, in a bowl.
Add oil and water and stir until a soft and sticky dough is formed.
Transfer the dough onto a lightly floured surface and shape the dough into a beautiful smooth dough.
Using a rolling pin, flatten the dough until about 3-4 mm thick. If the dough starts to shrink back as you roll it, let it rest for a few min and then continue rolling.
Sprinkle dough with topping (optional), and give it another roll to press the toppings into the dough.
Cut the dough into cracker-sized rectangles using a pizza cutter or a sharp knife and place them on a baking sheet.
Prick each cracker with a fork a few times to prevent them from puffing during baking.
Bake for about 12 min or until lightly browned on the edges. I baked mine a little too long.
Transfer the baked crackers to a wire rack to cool completely.
Enjoy the crackers with some cheese or hummus.
