Peel and finely grate carrots.
Heat up the liquid to room temperature, about 37 C.
In a mixing bowl, add the liquid, fresh yeast, olive oil and carrots and stir until the yeast has dissolved.
Add flour and knead with a machine for about 6 min
Add salt and knead with a machine for about 4 min.
Cover the bowl and let the dough rest for about 40 min.
Preheat the oven to 250 C.
Transfer the dough to a lightly floured surface and divide the dough into 4 equal pieces. Roll them into balls and flatten them out a little.
Place the buns on a baking sheet, cover and let rest for 30 min.
Bake in the middle of the oven for about 14-15 min.
Remove buns from oven, cover the buns with a kitchen towel and let them cool completely. This step is very important!!
