Using a stand mixer, mix all the ingredients (except butter) together very very very well.
Heat a pan over medium high heat. Once hot, lightly butter the pan.
Pour about 2 tbsp batter into the pan and cook for about 1.5 min or until the pancake looks dry at the edges and small bubbles appear on the top.
Flip the pancake and cook for another 1-2 min.
Repeat with remaining batter. Since the pancakes are small, you should be able to cook about 3 pancakes at the time.
Top your pancakes with desired toppings, for instance maple syrup, whipped cream, jam, fruits... and enjoy
