Preheat the oven to 180 C.
In a large bowl, combine the oats, seeds/nuts and salt.
In a separate bowl, combine vanilla extract, melted coconut oil, maple syrup and peanut butter.
Pour the wet ingredient into the bowl with the dry ingredients and mix well until every oat and seed/nut is coated.
Transfer the granola into a baking pan and spread it out evenly.
Bake for 10 min, then give it a stir.
Bake for 10 min, then add the dried fruits and give it a stir.
Bake for another 5 min.
Remove from oven and let cool completely.
Add the chopped chocolate and stir.
Enjoy the granola with some milk or yoghurt.
