Blueberry Muffin Baked Oats

Ingredients

  • 0.75 dl oats
  • 0.75 dl milk
  • 2 tbsp mashed banana ripe banana
  • 2 tsp maple syrup
  • 1 tsp vanilla sugar
  • 0.5 tsp baking powder
  • a pinch of salt
  • 0.5 dl blueberries frozen
  • 0.5 tsp maple syrup
  • 1 ml potato flour

Instructions

  • Preheat the oven to 180 C.
  • Into a blender, add oats, milk, mashed banana, maple syrup, vanilla sugar, baking powder and salt. Blend until smooth.
  • In a separate bowl, combine frozen blueberries, maple syrup and potato flour. Microwave until the blueberries are soft and mash the berries. Microwave for another 30 seconds and give it a stir.
  • Pour half of the batter into a ramekin. Place the blueberries in the middle and pour the remaining batter on top of the berries.
  • Bake in the oven for about 25 minutes.
  • Enjoy!

Notes

  • If you want to save some time, try air frying the oats instead at 170C/338F for about 15 minutes, and you should end up with the same result taste wise.
