Cook pasta according to the instructions on the packaging.
Meanwhile, make the spinach sauce.
Into a blender add spinach, hot water, grated parmesan, cashews, garlic and lemon juice. Blend until super smooth.
Pour the spinach sauce into a saucepan over medium heat and let cook for 4 min. Season with salt and black pepper.
Add the cooked pasta into the sauce and toss to coat. If you want the sauce to be thinner, add some pasta water.
Optional: Add some cooked halloumi and garnish with some more parmesan cheese.
