Slice onion, mince garlic and cut potato into 1 cm cubes.
Add olive oil to a pot over medium heat.
Sauté onion for about 8 min or until slightly softened.
Add garlic and sauté for another 2 min without burning the garlic.
Add potato and sauté for 1 min.
Add broccoli and vegetable broth. Let come to a boil and let simmer for about 22 min or until the potatoes are fork tender.
Mix the soup with a blender until smooth.
Add milk and season with thyme, salt and black pepper.
Serve and enjoy!
