Broccoli Soup

Ingredients

  • 0.5 yellow onion sliced
  • 1 clove of garlic minced
  • 1 big potato cut into small cubes
  • 400 g broccoli frozen
  • olive oil
  • 5 dl vegetable broth
  • 2.5 dl milk
  • thyme dried
  • salt to taste
  • black pepper to taste

Optional Garnish

  • cream
  • olive oil
  • black pepper
  • chewy cheese chips

Instructions

  • Slice onion, mince garlic and cut potato into 1 cm cubes.
  • Add olive oil to a pot over medium heat.
  • Sauté onion for about 8 min or until slightly softened.
  • Add garlic and sauté for another 2 min without burning the garlic.
  • Add potato and sauté for 1 min.
  • Add broccoli and vegetable broth. Let come to a boil and let simmer for about 22 min or until the potatoes are fork tender.
  • Mix the soup with a blender until smooth.
  • Add milk and season with thyme, salt and black pepper.
  • Serve and enjoy!
