20 min Tomato Orzo
Want to eat something fancy but don't have the time or energy to cook? No need to worry! Make this super simple tomato orzo in only 20 min!
Ingredients
- olive oil
- 0.5 tomato chopped
- 1 clove of garlic minced
- 1 tsp tomato paste
- 0.75 dl risoni
- 1.5 dl vegetable broth
- 2 tbsp parmesan cheese grated
- 1 tbsp mozzarella
- salt
- black pepper
Instructions
- Chop tomato and mince garlic.0.5 tomato, 1 clove of garlic
- In a saucepan on high heat, add some olive oil.
- Sauté tomatoes and garlic until soft, about 2 min.
- Add tomato paste and sauté for 1 min.1 tsp tomato paste
- Add risoni, stir and cook for 1 min.0.75 dl risoni
- Add vegetable broth and cook the risoni for about 5 min while stirring frequently.1.5 dl vegetable broth
- Add grated parmesan cheese and mozzarella and stir.2 tbsp parmesan cheese, 1 tbsp mozzarella
- Cook for another 5 min, or until the risoni is fully cooked, stir frequently.
- Season with salt and black pepper and enjoy!
