Ingredients

  • 0.75 dl oats old fashioned or quick oats
  • 0.75 dl milk or water
  • 2 tbsp apple sauce
  • 2 tsp maple syrup
  • 0.5 tsp baking powder
  • 1 ml cinnamon
  • a pinch of nutmeg
  • a pinch of salt
  • 2 tbsp carrot finely grated
  • 1 tbsp walnuts chopped
  • 1 tbsp raisins

Frosting

  • 1 tbsp cream cheese
  • 1 tsp milk
  • 0.5-1 tsp maple syrup

Instructions

  • Preheat the oven to 180 C.
  • Into a blender, add oats, milk, apple sauce, maple syrup, baking powder, cinnamon, nutmeg and salt and blend until smooth.
  • Add finely grated carrot, chopped walnuts and raisins and give it a stir.
  • Pour the batter into a ramekin and bake it in the middle of the oven for about 20-25 minutes, depending on how moist or "dry" you want the carrot cake to be.
  • Meanwhile, make the frosting by mixing together cream cheese, milk and maple syrup.
  • Top the baked oats with the frosting and enjoy!

Notes

  • If you want to save some time, try air frying the oats instead at 170C/338F for about 15 minutes, and you should end up with the same result taste wise.
