Blueberry Muffin Baked Oats
Ingredients
- 0.75 dl oats
- 0.75 dl milk
- 2 tbsp mashed banana ripe banana
- 2 tsp maple syrup
- 1 tsp vanilla sugar
- 0.5 tsp baking powder
- a pinch of salt
- 0.5 dl blueberries frozen
- 0.5 tsp maple syrup
- 1 ml potato flour
Instructions
- Preheat the oven to 180 C.
- Into a blender, add oats, milk, mashed banana, maple syrup, vanilla sugar, baking powder and salt. Blend until smooth.
- In a separate bowl, combine frozen blueberries, maple syrup and potato flour. Microwave until the blueberries are soft and mash the berries. Microwave for another 30 seconds and give it a stir.
- Pour half of the batter into a ramekin. Place the blueberries in the middle and pour the remaining batter on top of the berries.
- Bake in the oven for about 25 minutes.

Notes
- If you want to save some time, try air frying the oats instead at 170C/338F for about 15 minutes, and you should end up with the same result taste wise.
