Carrot Cake Baked Oats
Ingredients
- 0.75 dl oats old fashioned or quick oats
- 0.75 dl milk or water
- 2 tbsp apple sauce
- 2 tsp maple syrup
- 0.5 tsp baking powder
- 1 ml cinnamon
- a pinch of nutmeg
- a pinch of salt
- 2 tbsp carrot finely grated
- 1 tbsp walnuts chopped
- 1 tbsp raisins
Frosting
- 1 tbsp cream cheese
- 1 tsp milk
- 0.5-1 tsp maple syrup
Instructions
- Preheat the oven to 180 C.
- Into a blender, add oats, milk, apple sauce, maple syrup, baking powder, cinnamon, nutmeg and salt and blend until smooth.
- Add finely grated carrot, chopped walnuts and raisins and give it a stir.
- Pour the batter into a ramekin and bake it in the middle of the oven for about 20-25 minutes, depending on how moist or "dry" you want the carrot cake to be.
- Meanwhile, make the frosting by mixing together cream cheese, milk and maple syrup.
- Top the baked oats with the frosting and enjoy!
Notes
- If you want to save some time, try air frying the oats instead at 170C/338F for about 15 minutes, and you should end up with the same result taste wise.
