Ingredients

  • 1 serving of pasta
  • 50 g spinach frozen and chopped
  • 50 g water hot
  • 20 g parmesan grated
  • 1 tbsp cashews 10 g
  • 0.5 clove of garlic grated
  • 1 tsp lemon juice
  • salt to taste
  • black pepper to taste

Instructions

  • Cook pasta according to the instructions on the packaging.
  • Meanwhile, make the spinach sauce.
  • Into a blender add spinach, hot water, grated parmesan, cashews, garlic and lemon juice. Blend until super smooth.
  • Pour the spinach sauce into a saucepan over medium heat and let cook for 4 min. Season with salt and black pepper.
  • Add the cooked pasta into the sauce and toss to coat. If you want the sauce to be thinner, add some pasta water.
  • Optional: Add some cooked halloumi and garnish with some more parmesan cheese.
