Spinach Pesto
Ingredients
- 1 serving of pasta
- 50 g spinach frozen and chopped
- 50 g water hot
- 20 g parmesan grated
- 1 tbsp cashews 10 g
- 0.5 clove of garlic grated
- 1 tsp lemon juice
- salt to taste
- black pepper to taste
Instructions
- Cook pasta according to the instructions on the packaging.
- Meanwhile, make the spinach sauce.
- Into a blender add spinach, hot water, grated parmesan, cashews, garlic and lemon juice. Blend until super smooth.
- Pour the spinach sauce into a saucepan over medium heat and let cook for 4 min. Season with salt and black pepper.
- Add the cooked pasta into the sauce and toss to coat. If you want the sauce to be thinner, add some pasta water.
- Optional: Add some cooked halloumi and garnish with some more parmesan cheese.
