Butter Bean Taco, For One

I created this recipe when I was craving bread and taco seasoning, but I wanted something different! It turned out delightful! I mean, freshly baked bread, creamy beans and guacamole, crispy fried egg and salsa, can't go wrong! Definitely making this recipe again soon!

Ingredients

Flatbread

  • 50 g all purpose flour
  • 25 g water

Salsa

  • 1 tbsp cucumber finely chopped
  • 1 tbsp tomatoes finely chopped
  • 1 tbsp feta cheese finely chopped
  • 1 tbsp fresh parsley finely chopped
  • 1 tbsp corn
  • 0.5 tsp lime juice

Guacamole

  • 2 tbsp avocado mashed
  • 1 tbsp plain yoghurt

Beans

  • 0.75 dl butter beans cooked
  • 1 tbsp water
  • 4 ml taco seasoning

Other

  • 1 egg
  • salt
  • black pepper

Instructions

Flatblead

  • Knead flour and water into a smooth dough, flatten it using a rolling pin, then cover it while preparing other toppings.
    50 g all purpose flour, 25 g water

Salsa

  • Mix finely chopped cucumber, tomatoes, feta cheese, parsley, corn and lime juice in a small bowl. Then season with salt and black pepper.
    1 tbsp cucumber, 1 tbsp tomatoes, 1 tbsp feta cheese, 1 tbsp fresh parsley, 1 tbsp corn, 0.5 tsp lime juice

Guacamole

  • Mix avocado and yogurt into a cream. Then season with salt and black pepper
    2 tbsp avocado, 1 tbsp plain yoghurt

Beans

  • In a small saucepan over medium heat, add the beans and water. Mush the beans into a pasta, then season with taco seasoning.
    0.75 dl butter beans, 1 tbsp water, 4 ml taco seasoning

Remaining Things to do

  • On a pan over high heat, cook the flatbread until it has gotten some color on both sides and until it is no longer raw. Set aside
  • Lower the heat on the pan, add some olive oil and fry the egg.

  • On the flatbread, spred the bean cream, then the egg, guacamole and the salsa!
