Mix sugar, soy sauce, mirin and sake in a bowl.
Cut salmon into four slices.
Season salmon with salt and black pepper, then cover the salmon with flour.
Heat rapeseed oil in a medium hot pan.
Place the salmon, skin side down, in the pan and cook until the skin becomes crispy.
Flip the salmon and cook until they are almost fully cooked.
Lower the heat and add the sauce.
Cook until the salmon is cooked to your liking and until the sauce has thicken.
Serve the teriyaki salmon with some rice and salad.
