These carrot bread buns are soft and juicy and perfect for a sandwich! They are easy to make and only requires 2 hours.

Ingredients

  • 0.75 dl carrot finely grated
  • 1 dl water
  • 0.5 dl milk
  • 12 g fresh yeast
  • 1 tsp olive oil
  • 3.5 dl all purpose flour
  • 0.5 tsp salt

Instructions

  • Peel and finely grate carrots.
  • Heat up the liquid to room temperature, about 37 C.
  • In a mixing bowl, add the liquid, fresh yeast, olive oil and carrots and stir until the yeast has dissolved.
  • Add flour and knead with a machine for about 6 min
  • Add salt and knead with a machine for about 4 min.
  • Cover the bowl and let the dough rest for about 40 min.
  • Preheat the oven to 250 C.
  • Transfer the dough to a lightly floured surface and divide the dough into 4 equal pieces. Roll them into balls and flatten them out a little.
  • Place the buns on a baking sheet, cover and let rest for 30 min.
  • Bake in the middle of the oven for about 14-15 min.
  • Remove buns from oven, cover the buns with a kitchen towel and let them cool completely. This step is very important!!
  • Enjoy the buns with optional toppings!

I used the carrot bread and made a sandwich with cream cheese, smoked salmon, cucumber and kale chips!
