Ingredients

Blueberry Jam

  • 1.5 dl blueberries frozen
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds
  • 0.5 tsp lemon juice

Oat Crumble

  • 2 dl oats
  • 2 dl oat flour
  • 2 tbsp maple syrup
  • 4 tbsp milk
  • 1 tbsp coconut oil melted

Instructions

  • Preheat the oven to 180 C.
  • In a bowl, add blueberries, maple syrup, chia seeds and lemon juice.
  • Microwave the berries for 20 seconds. Give it a stir. Microwave for another 20 seconds. Give it a stir. Microwave for another 20 seconds. Give it a stir and mush the berries. Let cool for 10 min.
  • In a separate bowl, combine oats, oat flour, maple syrup, milk and melted coconut oil.
  • Transfer 2/3 of the oat crumble to an oven proof non stock form and press it tighly. It should be about 1 cm thick.
  • Top with the blueberry jam and then the remaining oat crumble.
  • Bake in the middle of the oven for about 25 min.
  • Remove from oven and let cool for 10 min.
  • Cut into 8 bars and enjoy!
