Blueberry Oat bars
Ingredients
Blueberry Jam
- 1.5 dl blueberries frozen
- 1 tbsp maple syrup
- 1 tbsp chia seeds
- 0.5 tsp lemon juice
Oat Crumble
- 2 dl oats
- 2 dl oat flour
- 2 tbsp maple syrup
- 4 tbsp milk
- 1 tbsp coconut oil melted
Instructions
- Preheat the oven to 180 C.
- In a bowl, add blueberries, maple syrup, chia seeds and lemon juice.
- Microwave the berries for 20 seconds. Give it a stir. Microwave for another 20 seconds. Give it a stir. Microwave for another 20 seconds. Give it a stir and mush the berries. Let cool for 10 min.
- In a separate bowl, combine oats, oat flour, maple syrup, milk and melted coconut oil.
- Transfer 2/3 of the oat crumble to an oven proof non stock form and press it tighly. It should be about 1 cm thick.
- Top with the blueberry jam and then the remaining oat crumble.
- Bake in the middle of the oven for about 25 min.
- Remove from oven and let cool for 10 min.
- Cut into 8 bars and enjoy!
