Ingredients

  • 1 tsp olive oil
  • 1 tbsp yellow onion chopped
  • 1 clove of garlic minced
  • 0.5 tsp tomato paste
  • 7 cherry tomatoes
  • 1 tbsp water
  • 0.5 tbsp cream cheese
  • 1 dl spinach
  • 1 dl cooked butter beans
  • salt to taste
  • black pepper to taste

Optional toppings

  • sesam seeds
  • pesto

Instructions

  • Chop yellow onion, mince garlic, and cut cherry tomatoes in half.
    1 tbsp yellow onion, 1 clove of garlic, 7 cherry tomatoes
  • Heal olive oil in a small pan on medium high heat.

  • Sauté onion until it has gotten some color, but do not burn it. About 2 min.
  • Add garlic and sauté for another 1 min.
  • Add tomato paste and sauté for another 1 min.
    0.5 tsp tomato paste
  • Add tomatoes and water. Mush the tomates a little bit with a spatula. Cook until the tomatoes has become soft.

  • Add cream cheese and spinach and stir. Cook until spinach has shrunken.
    0.5 tbsp cream cheese, 1 dl spinach
  • Add the beans and cook for about 5 min.
    1 dl cooked butter beans
  • Season with salt and black pepper.
  • Serve, top with sesame seeds and pesto, och eat with bread.
