Butter Beans in tomato based sauce, for one
Ingredients
- 1 tsp olive oil
- 1 tbsp yellow onion chopped
- 1 clove of garlic minced
- 0.5 tsp tomato paste
- 7 cherry tomatoes
- 1 tbsp water
- 0.5 tbsp cream cheese
- 1 dl spinach
- 1 dl cooked butter beans
- salt to taste
- black pepper to taste

- sesam seeds
- pesto
Instructions
- Chop yellow onion, mince garlic, and cut cherry tomatoes in half.1 tbsp yellow onion, 1 clove of garlic, 7 cherry tomatoes
- Heal olive oil in a small pan on medium high heat.1 tsp olive oil
- Sauté onion until it has gotten some color, but do not burn it. About 2 min.
- Add garlic and sauté for another 1 min.
- Add tomato paste and sauté for another 1 min.0.5 tsp tomato paste
- Add tomatoes and water. Mush the tomates a little bit with a spatula. Cook until the tomatoes has become soft.1 tbsp water
- Add cream cheese and spinach and stir. Cook until spinach has shrunken.0.5 tbsp cream cheese, 1 dl spinach
- Add the beans and cook for about 5 min.1 dl cooked butter beans
- Season with salt and black pepper.
- Serve, top with sesame seeds and pesto, och eat with bread.
