Ingredients

  • 6-10 potatoes
  • 1.5 l water
  • 1 tbsp salt
  • 0.5 tsp baking soda
  • 4 tbsp olive oil
  • 2 cloves of garlic
  • salt
  • black pepper

Instructions

  • Preheat oven to 220 C, with the baking tray in it.
  • Peel and wash potatoes and cut into chunks.
  • In a pot, bring water to a boil and add salt and baking soda. Stir until the salt has dissolved.
  • Add the potatoes and boil for about 10 min or until fork tender.
  • Meanwhile, add olive oil and minced garlic into a small pot over medium heat and cook until the garlic has gotten some colour.
  • Strain the oil into a large bowl and save the garlic for later.
  • Drain the cooked potatoes and let them steam for 1 min to get rid of excess moisture.
  • Add the potatoes to the bowl with the oil, add some salt and black pepper and toss the potatoes to create a mashed potato like layer on them.
  • Transfer the potatoes to the preheated baking tray and spread them out so there is a little space between each of them.
  • Roast the potatoes for 20 min
    Give them a careful flip
    Roast for another 10 min

    Roast for another 10-15 min or until they look golden and crispy
  • Remove from oven, add the garlic and give them a careful toss.
  • Season with salt if needed and enjoy!
