Crispy Roasted Garlic Potatoes
Ingredients
- 6-10 potatoes
- 1.5 l water
- 1 tbsp salt
- 0.5 tsp baking soda
- 4 tbsp olive oil
- 2 cloves of garlic
- salt
- black pepper
Instructions
- Preheat oven to 220 C, with the baking tray in it.
- Peel and wash potatoes and cut into chunks.
- In a pot, bring water to a boil and add salt and baking soda. Stir until the salt has dissolved.
- Add the potatoes and boil for about 10 min or until fork tender.
- Meanwhile, add olive oil and minced garlic into a small pot over medium heat and cook until the garlic has gotten some colour.
- Strain the oil into a large bowl and save the garlic for later.
- Drain the cooked potatoes and let them steam for 1 min to get rid of excess moisture.
- Add the potatoes to the bowl with the oil, add some salt and black pepper and toss the potatoes to create a mashed potato like layer on them.
- Transfer the potatoes to the preheated baking tray and spread them out so there is a little space between each of them.

- Remove from oven, add the garlic and give them a careful toss.
- Season with salt if needed and enjoy!
