Halloumi Lasagne
Ingredients
- olive oil
- 1 yellow onion chopped
- 1 clove of garlic minced
- 3 tbsp tomato paste
- 500 g crushed tomatoes
- 4 dl water
- 2 cubed vegetable bouillon cube
- 1 tsp thyme
- 1 tsp honey
- 100 g spinach
- 200 g lasagna sheets fresh
- 400 g halloumi
- 1 dl pumpkin seeds
- 1.5 dl cheese grated
- salt
- black pepper
Instructions
- Preheat oven to 225 C.
- Chop yellow onion, mince garlic and thinly slice halloumi.
- Heat a pan to medium high and add olive oil.
- Sauté onion for 4 min.
- Add garlic and tomato paste and sauté for 1 min.
- Add crushed tomatoes, water, vegetable bouillon, thyme and honey, let come to a boil, then simmer for 5 min.
- Add spinach and let simmer for 5 min.
- Now to the layering! In an oven proof form, layer tomato sauce, lasagna sheets, pumpkin seeds and halloumi. I made about 3 layers of lasagna sheets, topped with some tomato sauce and lastly some grated cheese.
- Bake in oven for 20 min.
