Ingredients

  • olive oil
  • 1 yellow onion chopped
  • 1 clove of garlic minced
  • 3 tbsp tomato paste
  • 500 g crushed tomatoes
  • 4 dl water
  • 2 cubed vegetable bouillon cube
  • 1 tsp thyme
  • 1 tsp honey
  • 100 g spinach
  • 200 g lasagna sheets fresh
  • 400 g halloumi
  • 1 dl pumpkin seeds
  • 1.5 dl cheese grated
  • salt
  • black pepper

Instructions

  • Preheat oven to 225 C.
  • Chop yellow onion, mince garlic and thinly slice halloumi.
  • Heat a pan to medium high and add olive oil.
  • Sauté onion for 4 min.
  • Add garlic and tomato paste and sauté for 1 min.
  • Add crushed tomatoes, water, vegetable bouillon, thyme and honey, let come to a boil, then simmer for 5 min.
  • Add spinach and let simmer for 5 min.
  • Now to the layering! In an oven proof form, layer tomato sauce, lasagna sheets, pumpkin seeds and halloumi. I made about 3 layers of lasagna sheets, topped with some tomato sauce and lastly some grated cheese.
  • Bake in oven for 20 min.
