Ingredients

  • 25 g coconut oil melted
  • 40 g maple syrup
  • 1 egg
  • 100 g ripe banana mashed, about 1 dl
  • 30 g milk
  • 0,5 tsp baking soda
  • 1 tbsp brown cane sugar or other sugar
  • 0,5 tsp cinnamon
  • a few pinches of salt
  • 2 dl oat flour
  • 0,5 dl oats

Instructions

  • Preheat the oven to 165 C.
  • In a bowl, combine melted coconut oil, maple syrup and egg well with a whisk.
  • Add mashed banana, milk, baking soda, sugar, cinnamon and salt and combine well.
  • Add oat flour and flour and combine
  • Divide the batter evenly between 6 muffin forms.
  • Bake in the oven for about 22-24 min.
  • Let the muffins cool for a few minutes.
  • Enjoy the muffins as they are, or spread some nut butter och chocolate spread on top! Super delicious both ways!
