Healthy Oatmeal Cookies
Ingredients
- 100 g oats
- 90 g whole wheat flour
- 1.5 tsp baking powder
- 1 tsp vanilla sugar
- 1 tsp cinnamon
- a few pinches of salt
- 2 tbsp coconut oil
- 1 egg
- 120 g honey
- 0.5 dl raisins or chopped chocolate
- 0.5 dl walnuts chopped
Instructions
- In a bowl, combine oats, whole wheat flour, baking powder, vanilla sugar, cinnamon and salt.
- In a separate bowl, combine melted coconut oil, egg and honey.
- Pour the wet ingredients to the bowl with the dry ingredients and combine well.
- Fold in raising and chopped walnuts.
- Let the dough chill in the fridge for 10 min.
- Preheat the oven to 165 C, and line a baking sheet with parchment paper.
- Form 12 balls with the dough, place them on the parchment paper and flatten them slightly.
- Bake for 12 min.
- Remove from oven and cool on the baking sheet for 15 min.
