Salmon with Creamy Potatoes and Leek
Ingredients
Creamy Potatoes and Leek
- 500 g potatoes cut into bite size pieces
- 10 cm leek (the white part) sliced
- 1 clove of garlic minced
- 1 tsp olive oil
- 1 dl cream
- 1 dl parmesan cheese grated
- salt
- black pepper
Salmon
- 440 g salmon
- 0.5 lemon sliced
- 1 tsp olive oil
- salt
- black pepper
Instructions
- Preheat the oven to 175 C.
- Remove scales from salmon and cut salmon into 4 pieces.440 g salmon
- Place salmon in an oven proof form, drizzle some olive and season with salt and black pepper.1 tsp olive oil
- Slice lemon and place lemon slices on salmon.0.5 lemon
- Cut potato into bite size pieces, slice leek and mince garlic500 g potatoes, 10 cm leek (the white part), 1 clove of garlic
- Cook salmon in the oven for about 20-25 min.
- Boil potatoes until cooked through.
- Sauté leek in a pan with olive oil for about 5 min.1 tsp olive oil
- Add garlic and sauté for 1 min.
- Add cream and parmesan cheese and stir.1 dl cream, 1 dl parmesan cheese
- When the potatoes are cooked through, add them into the sauce as well and season with salt and black pepper.
- Serve salmon wich creamy potatoes and leek and finish off with fresh parsley.
