SPINACH AND RICOTTA PASTA BAKE

Ingredients

  • 160 g pasta of choice
  • olive oil
  • 1 clove of garlic minced
  • 60 g spinach
  • 160 g ricotta cheese
  • 125 g mozzarella shredded
  • 1 dl parmesan grated
  • 1 egg
  • basil fresh or dried
  • salt
  • black pepper
  • 400 g marinara sauce

Instructions

  • Preheat oven to 200 C.
  • Boil pasta in salted water until al Dante.
  • Heat some olive oil in a pan over medium high heat.
  • Sauté minced garlic for about 1 min. Then add spinach and cook until the spinach has shrunken.
  • Chop the cooked garlic spinach.
  • In a bowl, combine the garlic spinach, ricotta, (half of the) shredded mozzarella, grated parmesan and egg. Season with basil, salt and black pepper.
  • In an oven proof form, pour in the marinara sauce. Then add the cooked pasta and then the spinach ricotta. Top with the other half of the shredded mozzarella.
  • Bake in oven for about 10-15 min or until the mozzarella has melted.
