Spinach and Ricotta Pasta Bake
SPINACH AND RICOTTA PASTA BAKE
Ingredients
- 160 g pasta of choice
- olive oil
- 1 clove of garlic minced
- 60 g spinach
- 160 g ricotta cheese
- 125 g mozzarella shredded
- 1 dl parmesan grated
- 1 egg
- basil fresh or dried
- salt
- black pepper
- 400 g marinara sauce
Instructions
- Preheat oven to 200 C.
- Boil pasta in salted water until al Dante.
- Heat some olive oil in a pan over medium high heat.
- Sauté minced garlic for about 1 min. Then add spinach and cook until the spinach has shrunken.
- Chop the cooked garlic spinach.
- In a bowl, combine the garlic spinach, ricotta, (half of the) shredded mozzarella, grated parmesan and egg. Season with basil, salt and black pepper.
- In an oven proof form, pour in the marinara sauce. Then add the cooked pasta and then the spinach ricotta. Top with the other half of the shredded mozzarella.
- Bake in oven for about 10-15 min or until the mozzarella has melted.
