Winter Kale Salad

Ingredients

Dressing

  • 1/2 tbsp olive oil
  • 1/4 tbsp lemon juice
  • 1/4 tbsp balsamic vinegar
  • 2 ml honey
  • 1 ml dijon mustard
  • salt to taste
  • black pepper to taste

Salad

  • 4 bunches of kale
  • 0.5 tsp olive oil
  • a few pinches of salt
  • 1 dl parmesan grated
  • 1 dl walnuts chopped
  • 1 dl raisins

Instructions

  • Make the dressing by whisking all the dressing ingredients in a small bowl.
  • Remove the hard stem from the kale and chop the leafy part of the kale into smaller pieces.
  • Place the kale in a large bowl. Drizzle some olive oil and sprinkle it with some salt. Massage the kale with your hands until it has softened.
  • Add the dressing and give it another massage to cover the kale completely
  • Add grated parmesan, chopped walnuts and raising and toss well.
  • Serve and enjoy!
