Winter Kale Salad
Ingredients
Dressing
- 1/2 tbsp olive oil
- 1/4 tbsp lemon juice
- 1/4 tbsp balsamic vinegar
- 2 ml honey
- 1 ml dijon mustard
- salt to taste
- black pepper to taste
Salad
- 4 bunches of kale
- 0.5 tsp olive oil
- a few pinches of salt
- 1 dl parmesan grated
- 1 dl walnuts chopped
- 1 dl raisins
Instructions
- Make the dressing by whisking all the dressing ingredients in a small bowl.
- Remove the hard stem from the kale and chop the leafy part of the kale into smaller pieces.
- Place the kale in a large bowl. Drizzle some olive oil and sprinkle it with some salt. Massage the kale with your hands until it has softened.
- Add the dressing and give it another massage to cover the kale completely
- Add grated parmesan, chopped walnuts and raising and toss well.
- Serve and enjoy!
