Cut halloumi into small cubes, about the size of a chickpea. Thinly slice shallot och mince garlic.
50 g halloumi, 1 shallot, 1 clove of garlic
In a medium hot small saucepan add some olive oil.
Add halloumi and cook until coloured on all sides. Then remove the halloumi from the pan.
Add some more olive oil and sauté shallot for about 3 min.
Add garlic and sauté for about 2 min.
Add tomato paste and sauté for about 1 min.
1 tsp tomato paste
Add cumin, garam masala and curry powder and cook for about 30 s.
1 ml cumin, 1 ml garam masala, 1 ml curry powder
Add chickpeas, milk and yoghurt and and let simmer for 5 min.
1 dl chickpeas, 4 tbsp milk, 4 tbsp coconut yoghurt
Add some chopped parsley and season with salt and black pepper.
Serve with fluffy flatbread like naan.
